Chocolate Cupcakes


Recipe adapted from Honeysuckle Catering. This recipe makes about 25 cupcakes.

  • 1 ¾cup All-purpose flour
  • 1 cup Cocoa powder
  • 2 cups sugar
  • 2 tsp Baking soda
  • 1 tsp Baking powder
  • 1 tsp Kosher salt
  • 1 tsp Vanilla extract
  • 1 cup strongly brewed coffee (room temperature)
  • 2 eggs at room temperature
  • 1 cup buttermilk shaken
  • ½cup of vegetable oil
  1. Preheat oven to 350 degrees F.
  2. Sift and combine all the dry ingredients in a bowl.
  3. In another bowl mix all the wet ingredients together, except for the freshly brewed coffee.
  4. Slowly pour the wet ingredients mix into the dry ingredients and combine. Do not over-mix the batter. Over-mixing turns the cupcakes tough.
  5. Fold the cup of coffee into the batter.
  6. Pour the batter into cupcake liners.
  7. Optional: sprinkle chocolate chips on top.
  8. Bake for 12 – 15 minutes.

After 12 minutes, check if the cupcakes are done by inserting a toothpick into the center. If it comes out clean, they are done. Do not over-bake the cupcakes, they will become tough. Let them cool completely before frosting them.




Chocolate buttercream frosting

  • 1 stick butter (room temperature)
  • 1 ½cups confectioners’sugar
  • 1/3 cup cocoa
  • ¼cup milk (add slowly as required)
  • 1 tsp vanilla extract
  1. Whip the butter, vanilla extract and sugar together.
  2. Add cocoa powder and beat some more.
  3. Slowly add milk by the trickle and stop when the topping reaches desired consistency.
  4. Beat everything together for as long as you can. At the very least for 15 minutes on high speed. Unlike the cupcake batter, the more you beat the better.
  5. Check the flavor. Too sweet? Add some cocoa powder. Not sweet enough? Add some sugar. And beat some more.
